I pack minimal cooking gear when horse camping.  Essentials should include some type of fire starter including campfire wood, a small dutch oven, one big skillet and one small one.  Spatula, and of course the old Coffee Pot.  You can cook anything in a dutch oven but bacon, potatoes, and eggs frying in an open skillet seem to be a part of most camps.
